Ingredients

  • 8 oz (225 g) halloumi cheese, sliced into ½-inch (1.25 cm) thick pieces
  • ½ cup shelled pistachios, finely chopped (60 g)
  • 2 tbsp olive oil (30 ml)
  • 2 tbsp honey (30 ml)
  • 1 tsp fresh thyme leaves
  • Optional: lemon wedges for serving

Instructions

  1. Pat the halloumi slices dry with paper towels to remove excess moisture.
  2. Place finely chopped pistachios on a plate and press each halloumi slice into them, coating both sides evenly.
  3. Heat olive oil in a skillet over medium heat. Add halloumi slices in a single layer.
  4. Cook for 2–3 minutes per side, until golden brown and crispy.
  5. Transfer to a serving plate. Drizzle with honey and sprinkle with fresh thyme leaves.
  6. Serve immediately with lemon wedges if desired.
