Ingredients

  • 1 can (20 ounces / 567 g) crushed pineapple in 100% juice, do not drain
  • 2 boxes (3.4 ounces / 96 g each) instant pistachio pudding mix
  • 1 container (8 ounces / 226 g) non-dairy whipped topping, fully thawed
  • 2 cups (100 g) mini marshmallows
  • 1 cup (120 g) pistachios, chopped

Instructions

  1. In a large mixing bowl, add the crushed pineapple with all its juice.
  2. Sprinkle in both boxes of instant pistachio pudding mix and stir for about 2 minutes until thickened.
  3. Gently fold in the thawed whipped topping using a spatula until well combined.
  4. Fold in the mini marshmallows until evenly distributed.
  5. Add chopped pistachios and fold again, reserving some for garnish if desired.
  6. Cover the bowl and refrigerate for at least 1 hour to firm up.
  7. Before serving, fluff the mixture and garnish with extra pistachios.

Notes

  • Do not drain the pineapple—its juice is needed to activate the pudding.
  • Chill for at least 1 hour, preferably longer, for best texture.
  • Can be made up to 24 hours in advance.
  • Use certified gluten-free pudding mix if needed.
  • Not suitable for freezing as texture may change.
