Ingredients

  • 12 Medjool dates, pitted
  • 120 g plain Greek yogurt
  • 2 tablespoons vanilla whey protein powder
  • 1 tablespoon honey
  • 2 tablespoons almond butter
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons finely chopped almonds

Instructions

  1. Slice each date lengthwise on one side and remove the pits if not already pitted. Set aside.
  2. In a small bowl, mix Greek yogurt, protein powder, honey, almond butter, and vanilla extract until smooth and thick.
  3. Fill each date with about 1 to 1 1/2 teaspoons of the protein mixture using a spoon or piping bag.
  4. Sprinkle chopped almonds on top of the filled dates.
  5. Chill for at least 15 minutes before serving for best texture.
