Ingredients

  • 1 cup uncooked long-grain rice
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces / 410 g) diced tomatoes, undrained
  • 1 cup water
  • 2 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Hot sauce (optional, to taste)

Instructions

  1. Rinse the rice under cold water until the water runs clear, then drain well.
  2. Heat olive oil in a medium saucepan over medium heat. Add chopped onion and cook for about 3 minutes until softened.
  3. Add rinsed rice and minced garlic. Stir and cook for 1 minute to lightly toast the rice.
  4. Pour in diced tomatoes with juices and water. Add thyme, salt, and black pepper. Stir gently.
  5. Bring to a boil, then cover and reduce heat to low. Simmer for about 20 minutes until liquid is absorbed and rice is tender.
  6. Remove from heat, uncover, and fluff with a fork.
  7. Add hot sauce if desired and serve.
