Ingredients

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13-inch pan with parchment paper.
  2. In a stand mixer, beat softened butter until smooth. Add sugar and beat until light and fluffy.
  3. Mix in almond extract and egg until combined.
  4. In a separate bowl, whisk flour, baking powder, and salt. Add to butter mixture on low speed until dough forms.
  5. Press dough into prepared pan using damp hands. Chill for 20 minutes.
  6. Bake crust for 15–20 minutes, until lightly golden. Reduce oven to 350°F (175°C).
  7. For the streusel: stir melted butter, flour, and sugar together. Refrigerate while crust bakes.
  8. Spread raspberry jam evenly over baked crust. Mix almonds into streusel and sprinkle over jam.
  9. Bake another 25–30 minutes, until topping is golden and jam is bubbling.
  10. Cool completely before lifting from pan and cutting into squares.
