Ingredients

  • 2 cups raw unsalted peanuts (base)
  • 1 1/2 cups pitted dried dates (base)
  • 1/2 teaspoon sea salt flakes (base)
  • 1/2 cup water (base)
  • 1 1/2 cups pitted dried dates (caramel)
  • 1/3 cup natural peanut butter (caramel)
  • 1/2 cup raw unsalted peanuts (caramel)
  • 1 cup water (caramel)
  • 1/4 cup natural peanut butter (drizzle)
  • 2 tablespoons coconut oil (drizzle)
  • 2 tablespoons unsweetened cocoa powder (drizzle)
  • 2 tablespoons maple syrup (drizzle)

Instructions

  1. Grease a 17 x 27cm slice pan and line with baking paper, extending paper above the edges.
  2. In a food processor, blend peanuts, dates, salt, and water for the base until mostly smooth. Press firmly into the pan. Clean the food processor.
  3. Blend dates, peanut butter, peanuts, and water for the caramel layer until completely smooth. Spread evenly over the base and optionally sprinkle with extra peanuts. Chill for 30 minutes.
  4. In a microwave-safe bowl, melt peanut butter and coconut oil (about 30 seconds). Stir in cocoa powder and maple syrup until smooth. Pour over the caramel layer and smooth the top.
  5. Refrigerate for 2 hours or until fully set. Slice and serve.

Notes

  • Use almond or cashew butter as a substitute for peanut butter.
  • Chia or flaxseed can be added to the base for added fiber and texture.
  • Sprinkle coconut over the caramel layer before adding the drizzle for extra flavor.
  • Can be enjoyed straight from the freezer but best after softening slightly.
  • Raw peanuts provide a more neutral flavor than roasted.
