Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda

  • 1 ½ cups granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar for 3–4 minutes until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla, lemon zest, and orange zest.
  5. Add the dry ingredients to the wet mixture gradually, alternating with the sour cream. Begin and end with the flour mixture. Mix until just combined.
  6. Gently fold in the red currants.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. To make the glaze, whisk powdered sugar with lemon and orange juice until smooth. Drizzle over cooled cake before serving.
