Ingredients

  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar or lemon juice)
  • 3 large eggs
  • 2 tablespoons cocoa powder (or 2.5 tbsp for richer flavor)
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar
  • Red food coloring (gel preferred)
  • 400g cream cheese
  • 200g butter, at room temperature
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans.
  2. Sift together flour, cocoa, and salt in a bowl.
  3. In a separate bowl, mix oil and sugar until smooth. Add eggs one at a time, mixing well.
  4. Stir in vanilla and red food coloring.
  5. Alternately add flour mixture and buttermilk, mixing just until combined. Do not overmix.
  6. Combine baking soda and vinegar, let fizz, and fold into the batter gently.
  7. Divide batter evenly between pans and bake 25–30 minutes or until a toothpick comes out clean.
  8. Cool cakes completely before frosting.
  9. For frosting, beat butter until fluffy. Add cream cheese and mix until smooth.
  10. Add powdered sugar and vanilla, beating until light and fluffy.
  11. Layer and frost the cake once cooled. Decorate with red velvet crumbs if desired.

Notes

  • Use beet juice as a natural red dye alternative.
  • Make cupcakes by baking for 18–20 minutes in a muffin tin.
  • Add nuts like pecans or walnuts for texture.
  • Swap frosting with coconut buttercream for variation.
  • Reduce sugar in the frosting for a tangier taste.
