Ingredients

    • Reuben Balls:
    • 2 cups cooked corned beef, finely chopped
    • 4 oz cream cheese, softened
    • 1 cup sauerkraut, drained and squeezed dry
    • 1 cup shredded Swiss cheese
    • 1 tsp garlic powder
    • 1/2 tsp black pepper
    • 1/2 tsp onion powder
    • 1 large egg
    • 1 1/4 cups breadcrumbs (1/4 cup for filling, 1 cup for coating)
    • Oil for frying or baking spray if baking

 

  • Spicy Thousand Island Sauce:
  • 1/2 cup mayonnaise
  • 3 tbsp ketchup
  • 1 tbsp sweet relish
  • 1 tsp hot sauce (adjust to taste)
  • 1/2 tsp paprika
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine corned beef, cream cheese, sauerkraut, Swiss cheese, garlic powder, black pepper, onion powder, egg, and 1/4 cup breadcrumbs. Mix until combined.
  2. Shape the mixture into 1 to 1 1/2 inch balls.
  3. Roll each ball in the remaining breadcrumbs to coat.
  4. Heat oil in a pan to 350°F (175°C). Fry in batches for 3–4 minutes until golden. Transfer to a paper towel–lined plate.
  5. To bake: Preheat oven to 400°F (205°C). Place balls on a lined baking sheet, spray lightly with oil, and bake for 18–20 minutes until crisp and golden.
  6. For the dipping sauce, whisk together mayonnaise, ketchup, relish, hot sauce, paprika, and pepper.
  7. Serve warm Reuben Balls with dipping sauce on the side.

Notes

  • Make sure sauerkraut is well-drained to avoid soggy texture.
  • You can prepare the balls a day ahead and refrigerate before cooking.
  • Use an air fryer for a lighter option—cook at 375°F for 10–12 minutes.
