Ingredients

  • 1 cup heavy whipping cream
  • 8 ounces dark chocolate, finely chopped or chocolate chips
  • 1 1/2 tablespoons champagne or sparkling wine
  • 1/2 teaspoon rosewater
  • 1/4 cup cocoa powder, for dusting

Instructions

  1. Place chopped dark chocolate in a medium heat-safe bowl.

  5. Cool the mixture at room temperature for 45–60 minutes, stirring occasionally, then cover and refrigerate for at least 2 hours until firm.
  6. Scoop the ganache into 1-tablespoon-sized balls and roll into smooth truffles.
  7. Roll each truffle in cocoa powder to coat evenly.
  8. Store in an airtight container in the refrigerator until ready to serve.
