Ingredients

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ½ cup pure maple syrup
  • ¼ cup melted unsalted butter, slightly cooled
  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp fine sea salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup packed brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the pumpkin puree, maple syrup, melted butter, vanilla extract, and egg until smooth.
  3. In a separate bowl, whisk the flour, baking powder, sea salt, cinnamon, and nutmeg.
  4. Fold the dry ingredients into the wet mixture until just combined. Stir in the brown sugar until no flour streaks remain.
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 25–28 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let the blondies cool completely before slicing into squares.

Notes

  • Add chopped pecans or walnuts for crunch.
  • Sprinkle flaky sea salt on top before baking for a finishing touch.
  • Drizzle with melted white chocolate after cooling for extra sweetness.
  • Use pumpkin pie spice instead of cinnamon and nutmeg for convenience.
  • Stir in mini white chocolate chips for a richer treat.
