Ingredients

  • 6 breakfast sausage patties
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk (room temperature)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (plus more for greasing)
  • Maple syrup, for serving

Instructions

  1. Cook sausage patties in a skillet over medium-high heat until browned and cooked through. Drain on paper towels and let cool slightly.
  2. In a bowl, whisk flour, baking powder, salt, and sugar together.
  3. In another bowl, whisk milk, egg, vanilla, and melted butter until smooth.
  4. Combine wet and dry ingredients, mixing gently until just combined (batter should be slightly lumpy).
  5. Preheat a greased nonstick skillet or griddle over medium heat.
  6. Dip each sausage patty in pancake batter, letting excess drip off, then place on skillet.
  7. Cook 2–3 minutes until bubbles form and bottom is golden. Flip and cook until other side is golden and batter is cooked through.
  8. Repeat with remaining patties. Serve warm with maple syrup.

Notes

  • Use maple or sage-flavored sausage for extra flavor.
  • For leaner versions, swap in turkey or chicken sausage.
  • Add cinnamon or nutmeg to the pancake batter for a cozy twist.
  • Dairy-free option: use almond or oat milk and plant-based butter.
  • For kids, cut in half and serve on skewers with syrup for dipping.
