Ingredients

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 10 oz cheese tortellini (fresh or frozen)
  • 3 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil and brown the sausage over medium heat, breaking it apart as it cooks.
  2. Add onion and garlic, sauté until softened and fragrant, about 3–5 minutes.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, and red pepper flakes if using. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes to develop flavor.
  5. Add tortellini and cook for 5–7 minutes until tender (longer if using frozen).
  6. Stir in spinach and cook until wilted. Season with salt and pepper to taste.
  7. Serve hot, optionally with grated Parmesan and crusty bread.

Notes

  • Use kale instead of spinach for a heartier green.
  • Swap sausage with ground turkey, chicken, or plant-based meat for variations.
  • Add a splash of cream for a creamier version.
  • Chopped mushrooms or zucchini make great veggie additions.
