Ingredients

  • 4 lbs sweet potatoes (about 7 small-to-medium), peeled and cubed
  • 2 teaspoons salt, divided
  • 1/3 cup green onion, finely sliced (mostly green parts)
  • 1/3 cup fresh flat-leaf parsley, finely chopped
  • 1 garlic clove, minced or pressed
  • 1/4 cup sour cream (plus 1 spoonful reserved for garnish)
  • 3 tablespoons butter, cubed
  • Freshly ground black pepper
  • 1 teaspoon extra-virgin olive oil

Instructions

  1. Place cubed sweet potatoes in a large saucepan and cover with water by 1 inch. Add 1 teaspoon salt. Bring to a boil, then reduce heat and simmer uncovered until fork-tender, 9–12 minutes.
  2. Drain potatoes well and return to pot. Mash to desired texture.
  3. While hot, stir in most of the green onion and parsley (reserving some for garnish), along with garlic. Add most of the sour cream, butter, and remaining salt. Mix until combined.
  4. Season with black pepper to taste. Adjust salt if needed.
  5. Transfer to a serving bowl. Swirl reserved sour cream on top, sprinkle with remaining herbs, drizzle with olive oil, and finish with extra black pepper. Serve warm.
