Ingredients

  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons sesame oil
  • 2 tablespoons fresh lime juice
  • Zest of 1 lime
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon rice vinegar
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon freshly chopped cilantro (optional)

Instructions

  1. In a medium bowl or jar, combine soy sauce, sesame oil, lime juice, lime zest, honey (or maple syrup), grated ginger, garlic, rice vinegar, and red pepper flakes. Whisk or shake until fully emulsified.
  2. Place protein or vegetables in a shallow dish or resealable bag. Pour marinade over and coat evenly. Marinate: chicken (30 minutes to 4 hours), seafood (15 to 30 minutes), tofu (30 to 60 minutes), vegetables (20 to 30 minutes).
  3. Remove from marinade and cook as desired: grill, bake, sauté, or air fry. If reusing marinade that touched raw meat, boil for several minutes before serving.

  • Makes approximately ½ cup of marinade.
  • Fresh lime juice provides the brightest flavor, but bottled can be used if needed.
