Ingredients

  • 1 pound prepared pizza dough
  • 2 tablespoons olive oil
  • 6 ounces beef or turkey breakfast sausage, fully cooked and crumbled
  • 3 cloves garlic, minced
  • 1 1/2 cups mozzarella cheese, freshly shredded
  • 1/2 cup fresh baby spinach, torn
  • 1/4 cup roasted red peppers, chopped
  • 1/3 cup feta cheese, crumbled
  • 6 large eggs
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 scallion, thinly sliced

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large rimmed baking sheet.
  2. Stretch pizza dough into a 15 x 12-inch rectangle on the sheet. Bake for 6 minutes, then remove from oven.
  3. If needed, cook sausage in a skillet until browned and cooked through.
  4. Brush baked crust with olive oil. Add sausage and minced garlic evenly.
  5. Sprinkle mozzarella over the surface, then top with spinach, red peppers, and feta.
  6. Carefully crack eggs over the pizza, spacing them evenly.
  7. Season with black pepper and red pepper flakes.
  8. Bake for 13–15 minutes, until egg whites are set and yolks slightly soft.
  9. Remove from oven, sprinkle with scallions, slice, and serve warm.
