Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 8 oz (225 g) fettuccine or your favorite pasta
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper, to taste
  • Red pepper flakes, optional
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, melt 1 tbsp butter over medium heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side until pink and opaque. Remove and set aside.
  3. In the same skillet, melt the remaining 1 tbsp butter. Add garlic and sauté for 30 seconds until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until smooth. Add a bit of reserved pasta water if needed to thin the sauce.
  5. Stir in the fresh spinach and cook until wilted, about 1–2 minutes.
  6. Add the cooked pasta and shrimp back to the skillet. Toss until evenly coated in the sauce. Season with salt, pepper, and red pepper flakes if using.
  7. Garnish with fresh parsley and extra Parmesan if desired. Serve immediately.

  • Use freshly grated Parmesan for a smooth, creamy sauce.
  • Reserve pasta water to adjust sauce thickness if needed.
  • Do not overcook shrimp to keep them tender and juicy.
