Ingredients

  • ½ pound cooked shrimp, peeled, deveined, and roughly chopped
  • ½ pound lump crab meat, picked over for shells
  • ⅓ cup chopped scallions (about 3 scallions)
  • 1½ tablespoons chopped fresh parsley
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • ½ teaspoon lemon juice
  • ½ teaspoon Creole seasoning (or pinch of paprika + salt + pepper)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • 2 hoagie rolls (8-inch) or crusty bread/baguette halves
  • 23 medium tomatoes (optional), thinly sliced
  • ½ to ¾ cup shredded cheese (Jarlsberg, mozzarella, or cheddar)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix scallions, parsley, lemon juice, Creole seasoning, salt, pepper, mayonnaise, and Dijon mustard.
  3. Gently fold in chopped shrimp and lump crab meat.
  4. Lightly spread mayonnaise on the cut side of rolls and toast cut-side down in a skillet until golden.
  5. Place toasted rolls on a baking sheet, cut-side up. Spoon seafood mixture over each.
  6. Top with tomato slices (optional) and sprinkle generously with shredded cheese.
  7. Bake for 10–12 minutes, or until cheese is melted and bubbly.
  8. Let cool slightly before serving.
