Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup (120 ml) chicken broth
  • 1/4 cup (60 ml) fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup (75 g) green olives, pitted and sliced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add shrimp in a single layer and cook for 2–3 minutes per side until pink and opaque. Remove and set aside.
  4. In the same skillet, add chicken broth and lemon juice. Simmer for 2–3 minutes to reduce slightly.
  5. Stir in lemon zest, olives, red pepper flakes, salt, and black pepper.
  6. Return shrimp to the skillet and toss gently in the sauce. Cook for 1–2 minutes until heated through.
  7. Sprinkle with fresh parsley and serve immediately.
