Instructions

  1. Cook the Beef: Add beef, onion, garlic, beef broth, Worcestershire sauce, smoked paprika, salt, and pepper to a slow cooker. Cook on low for 8 hours or high for 4–5 hours until beef is tender.
  2. Shred the Beef: Remove beef and shred with two forks. Return to the slow cooker to soak up juices while preparing the bread.
  3. Toast the Bread: Lightly butter each brioche slice and toast in a skillet or oven until golden and crisp.
  4. Assemble: Place shredded beef on toasted bread, top with cheddar cheese and red bell pepper slices. Broil for 1–2 minutes until cheese melts.
  5. Garnish and Serve: Sprinkle with chopped parsley. Serve open-faced or with a top slice of brioche.
