Ingredients

  • 1 box brownie mix
  • 2 large eggs
  • ½ cup vegetable oil
  • ¼ cup water
  • ½ cup chocolate chips or chocolate chunks
  • ¾ cup brown sugar
  • ¼ cup cocoa powder
  • 1½ cups hot water
  • ½ teaspoon vanilla extract

Instructions

  1. Lightly grease the inside of a 4–6 quart slow cooker.
  2. In a large bowl, mix the brownie mix, eggs, vegetable oil, and water until smooth.
  3. Fold in the chocolate chips if using.
  4. Spread the brownie batter evenly in the prepared slow cooker.
  5. In a separate bowl, whisk together the brown sugar and cocoa powder.
  6. Sprinkle the sugar and cocoa mixture evenly over the brownie batter.
  7. Carefully pour the hot water over the top without stirring.
  8. Drizzle the vanilla extract evenly over the surface.
  9. Cover and cook on HIGH for 2–2½ hours or on LOW for 4–5 hours, until the top is set and the bottom is saucy.
  10. Spoon into bowls and serve warm, optionally with ice cream or whipped cream.

Notes

  • Do not stir after adding the hot water to preserve the pudding texture.
  • The sauce thickens as it cools and loosens again when reheated.
  • Cooking longer results in a firmer pudding with less sauce.
  • Best served warm.
  • Ideal for gatherings and potlucks.
