Ingredients

1/4 cup mayonnaise

2 tbsp ketchup

2 tsp mustard

2 tbsp chopped pickles or relish

1 lb ground round or ground chuck

1 tsp kosher salt

1 tsp black pepper

1 tsp garlic salt

4 six-inch flour tortillas

4 slices sharp cheddar cheese

1 cup shredded iceberg lettuce

1/2 cup sliced tomatoes

1/2 cup diced yellow onion

Instructions

  1. In a small bowl, mix mayonnaise, ketchup, mustard, and chopped pickles to make the secret sauce. Set aside.
  2. Preheat a cast iron skillet or griddle over medium-high heat.
  3. Divide ground beef into four loose mounds. Season each with kosher salt, black pepper, and garlic salt.
  4. Place beef mounds on the hot surface. Cook for about 2 minutes, then press a tortilla onto each mound and flatten to match the tortilla size using a spatula or burger press.
  5. Cook for 2–3 more minutes until the tortilla is golden and crispy. Flip, add a slice of cheddar, and cook for another 1–2 minutes until cheese is melted.
  6. Remove from skillet and top with shredded lettuce, tomatoes, and onion. Drizzle with secret sauce.
  7. Fold and serve immediately while hot and crispy.
