Ingredients

  • 2 cups rolled oats (old-fashioned oats)
  • 1 cup unsweetened applesauce
  • 1/3 cup honey or pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup diced apples
  • Optional: 1/4 cup chopped walnuts or pecans
  • Optional: 1/4 cup raisins or dried cranberries
  • Optional: A small pinch of ground nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, stir together applesauce, honey or maple syrup, vanilla, cinnamon, and salt until well combined.
  3. Add rolled oats and diced apples. Mix until oats are fully coated and apples are evenly distributed.
  4. If using, stir in nuts, dried fruit, or nutmeg.
  5. Transfer mixture to the prepared pan. Press it down firmly and evenly.
  6. Bake for 25–30 minutes until top is set and lightly golden.
  7. Cool completely in the pan before lifting out and slicing into bars.

Notes

  • Use quick oats for a softer texture.
  • Pears can be substituted for apples.
  • Chia or flaxseed can add extra fiber and nutrition.
  • Date syrup offers a deeper sweetness in place of honey/maple syrup.
  • Let bars cool fully to prevent crumbling when slicing.
