Ingredients

  • 250g boneless, skinless chicken breasts or thighs, sliced into thin strips
  • 250g egg noodles or chow mein noodles
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger (optional)
  • 1 cup bell peppers (any color), thinly sliced
  • 1 small carrot, julienned or thinly sliced
  • 1 cup shredded cabbage
  • 2 tablespoons soy sauce
  • 12 tablespoons chili sauce (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar (optional)
  • 23 tablespoons chicken broth or water
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro, chopped (optional garnish)
  • Lime wedges (optional, for serving)
  • 1 tablespoon vegetable oil (for stir-frying)
  • Salt and black pepper, to taste

Instructions

  1. Cook noodles according to package instructions until al dente. Drain, rinse with cold water, toss with a little oil, and set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add onion and sauté for 1–2 minutes until softened.
  3. Add garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add chicken strips, season with salt and pepper, and cook for 5–6 minutes until chicken is cooked through and lightly browned.
  5. Add bell peppers, carrots, and cabbage. Stir-fry for 2–3 minutes until vegetables are slightly tender but still crisp.
  6. In a small bowl, mix soy sauce, chili sauce, sesame oil, and sugar.
  7. Add cooked noodles and sauce mixture to the pan. Toss until noodles are coated and heated through. Add broth or water if needed to loosen the sauce.
  8. Adjust seasoning to taste. Remove from heat.
  9. Garnish with green onions, cilantro, and a squeeze of lime if using.
  10. Serve hot.
