Ingredients

4 boneless, skinless chicken breasts (6 oz each)

2 teaspoons paprika

1 teaspoon oregano

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

5 oz frozen chopped spinach, thawed and squeezed dry

1/2 cup crumbled feta cheese

1/4 cup ricotta cheese

2 tablespoons chopped scallions

2 garlic cloves, minced

1/2 teaspoon dried dill

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken dry and cut a horizontal slit into each breast to form a pocket.
  3. Mix paprika, oregano, garlic powder, onion powder, salt, and pepper. Rub all over chicken, inside and out.
  4. In a bowl, mix spinach, feta, ricotta, scallions, garlic, and dill until well combined.
  5. Stuff the filling into each chicken pocket and secure with toothpicks.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden.
  7. Transfer skillet to the oven and bake for 15–18 minutes, until chicken is cooked through (internal temp 165°F).
  8. Optional: Broil for 1–2 minutes for extra browning. Remove toothpicks before serving.
