Ingredients

  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 medium Granny Smith apple, stem removed
  • 2 tablespoons olive oil
  • 2 tablespoons golden balsamic vinegar
  • 1 teaspoon poppy seeds
  • 1 teaspoon honey
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper, to taste

Instructions

  1. In a medium bowl, whisk together the olive oil, golden balsamic vinegar, poppy seeds, honey, kosher salt, and black pepper until well combined. Set aside.
  2. Spiralize the apple using a thicker blade. If unavailable, cut into thin matchstick-style strips.
  3. Trim apple spirals to about 6–8 inches using kitchen scissors or a knife.
  4. In a large mixing bowl, combine the shredded green cabbage, red cabbage, and prepared apple.
  5. Pour the dressing over the slaw and toss until everything is evenly coated.
  6. Serve immediately for maximum crunch, or refrigerate and serve later.
