Ingredients

  • 2 ribeye or sirloin steaks (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon Italian seasoning or chopped parsley

Instructions

  1. Season and Sear Steaks: Pat steaks dry and season with salt and pepper. Heat olive oil and butter in a skillet over medium-high heat. Sear steaks for 3–4 minutes per side (or to desired doneness). Remove and let rest.
  2. Make Garlic Cream Sauce: In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant. Stir in heavy cream, Parmesan, Dijon mustard (if using), and Italian seasoning. Simmer 2–3 minutes until slightly thickened.
  3. Combine: Return steaks to skillet and spoon sauce over them. Simmer for 1–2 minutes to warm through.
  4. Serve: Plate steaks, drizzle with remaining sauce, and garnish with parsley. Serve with mashed potatoes or vegetables.

Notes

  • Use a meat thermometer to check doneness: 145°F (63°C) for medium.
  • For extra flavor, add mushrooms with the garlic.
  • Heavy cream can be swapped for half-and-half for a lighter version.
  • Leftover sauce thickens—add a splash of cream when reheating.
  • Let steak rest before slicing to retain juices.
