Ingredients

  • 2 racks beef ribs (about 1.5 to 2 kg)
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Rinse ribs under cold water, pat dry, and remove the membrane from the back.
  2. Season ribs with salt, pepper, paprika, and garlic powder. Let sit for 15 minutes.
  3. Preheat oven to 160°C. Place ribs on a foil-lined tray and cover tightly with foil.
  4. Bake for 2.5 to 3 hours until tender.
  5. In a saucepan, heat olive oil and sauté garlic for 1 minute.
  6. Add honey, soy sauce, ketchup, brown sugar, and vinegar. Simmer for 5–7 minutes.
  7. Mix cornstarch with water and stir into sauce until thickened and glossy.
  8. Remove ribs from oven, uncover, and brush generously with sauce.
  9. Increase oven temperature to 200°C and bake uncovered for 10–15 minutes, basting once, until caramelized.
  10. Let rest briefly before slicing and serving.

  • Remove the membrane for more tender ribs.
  • Add chili flakes or hot sauce for a spicy version.
  • Finish on a grill for a smoky flavor.
  • Store leftovers in the fridge for up to 3 days.
  • Reheat covered in oven to retain moisture.
