Ingredients

Instructions

  1. In a medium bowl, mix graham cracker crumbs and melted butter until evenly combined.
  2. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Freeze for 15 minutes to set.
  3. In a saucepan over medium heat, cook strawberries, granulated sugar, and lemon juice for 8–10 minutes until the mixture thickens. Let cool completely.
  4. In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until creamy.
  5. In a separate bowl, whip cold heavy cream until stiff peaks form.
  6. Fold whipped cream into the cream cheese mixture until light and fluffy.
  7. Gently fold the cooled strawberry mixture into the filling to create soft swirls.
