Ingredients

  • 10 Medjool dates, pitted
  • 10 tablespoons almond butter (smooth, unsweetened)
  • 20 whole roasted almonds
  • 5 roasted almonds, chopped
  • 1 cup dark chocolate chunks or chips
  • flaky sea salt, for topping

Instructions

  1. Slice each date lengthwise and remove the pit while keeping the date intact. Arrange on a parchment-lined tray.
  2. Fill each date with about 1 tablespoon almond butter and press two whole almonds into the filling.
  3. Melt dark chocolate in a microwave in 30-second intervals, stirring until smooth.
  4. Dip each stuffed date into melted chocolate, coating evenly, then place back on the tray.
  5. Sprinkle with chopped almonds and flaky sea salt while chocolate is still soft.
  6. Refrigerate for 20–30 minutes until chocolate is set.
  7. Serve chilled or slightly softened.

Notes

  • Use peanut butter or cashew butter instead of almond butter if preferred.
  • Add toppings like shredded coconut or crushed pistachios for variation.
  • Ensure chocolate is dairy-free if making vegan.
  • Store in the refrigerator for up to 1 week or freeze for up to 1 month.
  • Let sit at room temperature briefly before serving if too firm.
