Ingredients

  • 20 medjool dates
  • ⅓ cup peanut butter (80g), smooth recommended
  • ¼ cup coconut oil (50g)
  • ¼ cup cacao or cocoa powder (15g)
  • Sea salt flakes
  • Alternative (if using pre-made chocolate):
  • ½ cup dark chocolate or chocolate chips (70g)

Instructions

  1. Line a large baking tray with parchment paper.
  2. Slice open each date lengthwise and remove the pit. Place the dates on the tray.
  3. Spoon about 1 teaspoon of peanut butter into the center of each date.
  4. For homemade chocolate coating: Melt coconut oil in a small bowl. Stir in cacao or cocoa powder until smooth.
  5. For pre-made chocolate: Melt chocolate in the microwave or over a double boiler until smooth.
  6. Let the chocolate cool slightly, then drizzle over stuffed dates or dip them fully.
  7. Sprinkle with sea salt flakes.
  8. Refrigerate for 20 minutes or until chocolate sets. Serve chilled.
