Ingredients

  • 2 kg fresh strawberries, hulled and crushed
  • 7 cups granulated sugar
  • 1 box (about 49 g) Sure Jell fruit pectin
  • 1/2 teaspoon unsalted butter (optional)

Instructions

  1. Wash, hull, and crush the strawberries using a masher or food processor, leaving some small chunks.
  2. In a large pot, combine crushed strawberries and fruit pectin. Stir well.
  3. Bring the mixture to a full rolling boil over medium-high heat, stirring constantly.
  4. Add all the sugar at once and continue stirring until it returns to a full rolling boil.
  5. Boil hard for exactly 1 minute while stirring continuously.
  6. Remove from heat and skim off foam or stir in butter to reduce it.
  7. Ladle hot jam into sterilized jars, leaving 1/4 inch headspace.
  8. Wipe rims, seal with lids, and process in a boiling water bath for 10 minutes if storing long-term.
  9. Let jars cool at room temperature until sealed.

Notes

  • Use ripe strawberries for best flavor and color.
  • Do not alter sugar quantity unless using low-sugar pectin.
  • Butter helps reduce foam but is optional.
  • Avoid doubling the batch to ensure proper setting.
  • Add lemon juice for extra brightness if desired.
