    • 1 tbsp olive oil
    • 1 tbsp butter
    • 2 cloves garlic, crushed
    • 1 sprig rosemary or thyme

    • For the Shrimp:
    • 200 g large shrimp, peeled and deveined
    • 1 tbsp butter
    • 1 tbsp olive oil
    • 1 tsp Cajun seasoning or paprika
    • 1 clove garlic, minced
    • Squeeze of lemon juice

    • For the Scallops:
    • 200 g sea scallops, cleaned and patted dry
    • 1 tbsp olive oil
    • 1 tbsp butter
    • 1 clove garlic, minced
    • Salt and pepper to taste

  • For the Garlic Herb Butter:
  • 3 tbsp butter
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • 1 tsp minced garlic

Instructions

  1. Prepare the Steak Bites: Pat steak cubes dry and season with salt and pepper. Heat olive oil in a skillet over high heat. Sear for 1–2 minutes per side until browned. Add butter, crushed garlic, and rosemary, tossing to coat. Remove and set aside.
  2. Cook the Shrimp: In the same skillet, melt butter and olive oil over medium heat. Add minced garlic and cook for 30 seconds. Add shrimp and sprinkle with Cajun seasoning. Cook for 2 minutes per side until pink and slightly charred. Finish with a squeeze of lemon juice. Remove and set aside.
  3. Sear the Scallops: Wipe the skillet clean. Heat olive oil until shimmering. Season scallops with salt and pepper, then sear for 1½–2 minutes per side until golden. Add butter and minced garlic, basting briefly. Remove from the pan.
  4. Make the Garlic Herb Butter: In a small saucepan, melt butter over low heat. Stir in garlic, lemon juice, and parsley. Cook gently until fragrant and combined.
  5. Assemble the Platter: Arrange steak bites, shrimp, and scallops on a platter. Drizzle with garlic herb butter and garnish with parsley. Serve immediately.

Notes

  • Ensure all seafood is patted dry before cooking for the best sear.
  • Use a cast-iron skillet for even browning and flavor.
  • The garlic herb butter can be made ahead and stored in the fridge for up to 1 week.
  • Pair with mashed potatoes, roasted vegetables, or crusty bread to complete the meal.
