Ingredients
Meatballs: 500 g ground beef or chicken, 1 egg, 60 g breadcrumbs, 60 ml milk, 1 small grated onion, 2 cloves garlic (minced), 1 tsp salt, ½ tsp black pepper, ½ tsp paprika, 2 tbsp vegetable oil for frying
Sweet & Sour Sauce: 240 ml pineapple juice, 120 ml ketchup, 60 ml rice vinegar or apple cider vinegar, 80 g sugar, 2 tbsp soy sauce, 1 tbsp cornstarch + 2 tbsp water (slurry)
Vegetables: 1 cup pineapple chunks, 1 red bell pepper (cut into 2 cm pieces), 1 green bell pepper (cut into 2 cm pieces)
Instructions
In a large bowl, mix all meatball ingredients. Form into 3 cm balls.
Heat oil in a pan over medium heat. Fry meatballs in batches until browned. Set aside.
In the same pan, whisk pineapple juice, ketchup, vinegar, sugar, and soy sauce. Bring to a simmer.
Add cornstarch slurry and cook 1–2 minutes until thickened.
Add bell peppers and pineapple. Cook 3–4 minutes until tender.
Return meatballs to pan and simmer 8–10 minutes until fully cooked and coated in sauce.
