Ingredients

  • 8 oz elbow macaroni or small shells
  • 1 can (14.5 oz) fire-roasted diced tomatoes, undrained
  • 1 tbsp olive oil
  • 1 small onion, finely diced (about ½ cup)
  • 2 cloves garlic, minced
  • 1 tsp sugar (adjust to taste)
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp unsalted butter
  • ¼ cup heavy cream or half-and-half (optional)
  • 2 tbsp fresh basil or parsley, finely chopped (optional)
  • ¼ cup grated Parmesan or sharp cheddar, for topping (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the macaroni until just tender. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 4–5 minutes until soft.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in the diced tomatoes with juices. Stir in sugar, salt, black pepper, and red pepper flakes (if using). Simmer for 8–10 minutes until thickened.
  5. Stir in butter until melted. If using, add cream and stir gently until smooth.
  6. Add cooked macaroni to the skillet. Toss until pasta is evenly coated and heated through.
  7. Remove from heat and top with fresh herbs and grated cheese, if desired. Serve warm.
