Ingredients

  • 1 shortcrust pastry (250 g)
  • 500 g fresh blueberries
  • 100 g granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 20 g unsalted butter
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and line a 24 cm tart pan. Press into the edges and prick the base with a fork.
  3. In a bowl, gently toss the blueberries with sugar, cornstarch, lemon juice, and vanilla extract until evenly coated.
  4. Pour the blueberry mixture into the tart shell and spread evenly.
  5. Dot the top with small pieces of butter.
  6. Bake for 40 to 45 minutes until the crust is golden and the filling is bubbling and set.
  7. Let the tart cool completely at room temperature.
  8. Before serving, lightly dust with powdered sugar.
