Ingredients

  • 2 1/2 pounds sweet onions (such as Vidalia), peeled and sliced into 1/4-inch thick rings

  • 1 teaspoon dry mustard powder
  • 1 teaspoon garlic powder
  • 3/4 teaspoon seasoned salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely grated Parmesan cheese
  • 4 tablespoons unsalted butter, cut into small cubes
  • 1/2 cup vegetable broth

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Arrange onion rings evenly in the dish, layering them loosely.
  3. In a small bowl, mix parsley, mustard powder, garlic powder, seasoned salt, oregano, salt, black pepper, and cayenne (if using). Sprinkle evenly over onions.
  4. Dot the onions with butter cubes and pour vegetable broth around the edges of the dish.
  5. Cover tightly with foil and bake for 75 to 90 minutes until onions are very tender.
  6. In a bowl, combine mozzarella, cheddar, and Parmesan cheeses.
  7. Remove foil, sprinkle cheese mixture evenly over onions, and bake uncovered for another 5 to 10 minutes until cheese is melted and bubbling.
