Ingredients

  • 14 oz firm tofu (400 g)
  • 1/4 cup cornstarch, plus 2 teaspoons
  • 1/3 cup vegetable oil
  • 1 teaspoon freshly grated ginger
  • 1 medium onion, thinly sliced
  • 2 tablespoons mirin
  • 2 tablespoons soy sauce
  • 2 teaspoons dark soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 cup warm water
  • 1 scallion, chopped (optional)
  • Steamed rice, for serving
  • Toasted sesame seeds, for garnish (optional)

Instructions

  1. Pat tofu dry with a paper towel and cut into 1-inch cubes.
  2. Place 1/4 cup cornstarch in a shallow bowl and coat each tofu cube evenly.
  3. Heat vegetable oil in a pan over medium heat. Fry tofu on all sides until golden brown. Remove and set aside.
  4. In the same pan, add grated ginger and sauté for 1 minute until fragrant.
  5. Add sliced onion and stir-fry for 2–3 minutes.
  6. Pour in mirin, soy sauce, dark soy sauce, brown sugar, and sesame oil. Stir and bring to a simmer.
  7. In a small bowl, mix remaining 2 teaspoons cornstarch with 1/2 cup warm water. Stir slurry into the sauce.
  8. Return tofu to the pan and toss to coat. Simmer for 1–2 minutes until sauce thickens.
  9. Stir in chopped scallions. Serve hot over steamed rice and garnish with sesame seeds if desired.

Notes

  • Use tamari for a gluten-free version.
  • Add chili paste or sriracha for a spicy twist.
  • Include veggies like broccoli or bell peppers for a complete bowl.
  • Air-fry tofu for a lighter version (375°F for 15 minutes).
