Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 500 grams fresh mushrooms (cremini or white), sliced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 tablespoon all-purpose flour
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add onion and cook until softened, about 4–5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add mushrooms and cook for 8–10 minutes until they release moisture and begin to brown.
  4. Sprinkle flour over the mixture and cook for 1–2 minutes, stirring well.
  5. Gradually add vegetable broth while stirring, then bring to a gentle simmer and cook for 10 minutes.
  6. Reduce heat and stir in heavy cream, salt, pepper, and thyme. Simmer gently for 5 minutes.
  7. Blend the soup partially or fully to desired consistency.
  8. Stir in fresh parsley, adjust seasoning, and serve warm.

Notes

  • Use a mix of mushrooms for deeper flavor.
  • Blend partially for texture or fully for a smooth finish.
  • Substitute cream with milk or plant-based alternatives for a lighter version.
  • Add soy sauce or smoked paprika for enhanced umami flavor.
  • Freeze before adding cream for best results.
