Ingredients

  • ½ yellow onion, diced
  • ½ cup diced carrot
  • ½ cup diced red bell pepper
  • 1 teaspoon coconut oil
  • 1 pound extra lean ground chicken or turkey
  • 1 tablespoon soy sauce
  • ½ cup peanut sauce, plus more for drizzling
  • 1 tablespoon lime juice
  • Bibb or butter lettuce, for serving
  • Green onions, sliced, for topping
  • Sesame seeds, for topping

Instructions

  1. Heat a large nonstick skillet over medium heat and lightly coat with cooking spray.
  2. Add diced onion, carrot, and red bell pepper. Cook for about 5 minutes, stirring regularly, until softened.
  3. Add coconut oil, ground chicken or turkey, and soy sauce. Cook while breaking up the meat until no longer pink.
  4. Stir in peanut sauce and lime juice. Mix well and cook for another minute to heat through. Adjust seasoning as needed.
  5. Spoon warm filling into bibb or butter lettuce leaves.
  6. Top with sliced green onions and sesame seeds. Serve immediately with extra peanut sauce if desired.

Notes

  • Use tamari or coconut aminos for a gluten-free version.
  • Crunchy peanut butter adds texture to the sauce.
  • Store lettuce separately to prevent sogginess.
  • Add minced garlic or ginger for extra depth of flavor.
  • Great for meal prep—just reheat filling and serve in fresh lettuce leaves.
