Ingredients

  • For the crust:
  • 4 tablespoons unsalted butter, melted and cooled (plus extra for greasing)
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • For the lemon filling:
  • 2 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh lemon juice (from about 3 lemons)

Instructions

  1. Preheat oven to 180°C (350°F). Lightly grease an 8-inch square baking pan with butter.
  2. In a medium bowl, mix graham cracker crumbs and sugar. Stir in melted butter until mixture is evenly moistened.
  3. Press the crust mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool slightly.
  4. In another bowl, whisk egg yolks until smooth. Add sweetened condensed milk and whisk until creamy.
  5. Slowly pour in lemon juice while whisking, mixing until filling is thick and glossy.
  6. Pour filling over the warm crust and spread evenly. Bake for 12–15 minutes, until just set but still slightly soft in the center.
  7. Cool at room temperature, then refrigerate for at least 2 hours until chilled and fully set.
  8. Slice into squares and serve chilled. Wipe knife between cuts for clean edges.
