Ingredients

  • 1 1/2 cups mashed ripe banana (about 3 large bananas)
  • 3/4 cup soft brown sugar
  • 1/3 cup mild-flavor olive oil

  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat oven to 350°F (180°C). Line a 9×5-inch loaf pan with parchment paper and lightly oil it.
  2. Mash bananas in a large bowl until smooth. Measure 1 1/2 cups.
  3. Whisk in olive oil, molasses, vanilla extract, brown sugar, salt, cinnamon, ginger, allspice, and nutmeg.
  4. Add flour, baking powder, and baking soda. Fold gently with a spatula until combined.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Tent with foil if top browns too quickly.
  7. Cool in pan for 10–15 minutes, then transfer to a wire rack to cool completely for at least 2 hours before slicing.
