Ingredients

  • 200 g extra-large shrimp, peeled and deveined
  • 4 slices ciabatta or sourdough bread
  • 1 cup (100 g) shredded Gruyère cheese
  • 1 cup (100 g) shredded sharp white cheddar cheese
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, finely minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt

Instructions

  1. Pat the shrimp dry with a paper towel. Heat a skillet over medium-high heat and melt 1 tablespoon of butter. Add garlic and cook briefly until fragrant.
  2. Add shrimp, season with salt and red pepper flakes, and cook for about 2 minutes per side until pink and cooked through. Remove from heat.
  3. In a small bowl, mix the remaining butter with parsley and lemon zest.
  4. Lay out the bread slices and add a layer of Gruyère and cheddar cheese.
  5. Place cooked shrimp evenly over the cheese, then top with another layer of cheese. Close the sandwich with the remaining bread slices.
  6. Spread the garlic herb butter on the outer sides of each sandwich.
  7. Place the sandwich in a cold pan and turn heat to medium. Cook until golden brown on one side.
  8. Butter the top side, flip the sandwich, and cook until the other side is golden and the cheese is melted. Cover briefly if needed.
  9. Remove from heat, rest briefly, slice, and serve warm.
