Ingredients

  • 1 medium head of cauliflower (about to 3 pounds), cut into florets
  • 1 whole bulb of garlic
  • 1 teaspoon olive oil (for roasting the garlic)
  • 2 teaspoons fresh thyme leaves, finely chopped
  • ¼ to ½ teaspoon kosher salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Optional: 2 tablespoons unsalted butter or plant-based butter
  • Optional: ¼ cup sour cream or plain Greek yogurt (or non-dairy alternative)
  • Optional: ¼ cup shredded cheese (cheddar, Parmesan, or Gruyère)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice ¼ inch off the top of the garlic bulb to expose cloves. Drizzle with olive oil, wrap in foil, and roast for 40–50 minutes until soft and golden. Let cool slightly.
  3. While garlic roasts, steam cauliflower florets over simmering water for 10–12 minutes until very tender.
  4. Transfer steamed cauliflower to a food processor. Squeeze roasted garlic out of skins and add to processor along with chopped thyme.
  5. Blend for 3–5 minutes, stopping to scrape sides, until smooth and creamy.
  6. Season with salt and pepper. Add optional butter, sour cream, or cheese if desired, and pulse to combine.
  7. Serve warm, garnished with olive oil and extra thyme if desired.
