Instructions

  1. Pour the milk powder into a wide nonstick pan and spread it evenly.
  2. Heat over medium-low, stirring constantly with a silicone spatula or wooden spoon to prevent burning and ensure even browning.
  3. The milk powder will gradually change color from white to beige to golden brown, and develop a nutty, caramel-like aroma. This takes about 8 to 12 minutes.
  4. Once golden and aromatic, remove from heat and stir for another 30 seconds to prevent over-browning from residual heat.
  5. Transfer to a bowl to cool completely.
  6. If clumpy, pulse briefly in a food processor until smooth. Store in an airtight container.
