Ingredients

  • 1 large French baguette (about 16 inches long)
  • 3 medium ripe tomatoes, finely diced (about 1 1/2 cups)
  • 3 cloves garlic, minced
  • 1/4 cup unsalted butter, softened

  • 1/4 cup fresh basil leaves, finely chopped
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice the baguette in half lengthwise and place both halves cut-side up on the prepared baking sheet.
  3. In a small bowl, mix the softened butter, minced garlic, olive oil, salt, and black pepper until smooth.
  4. Spread the garlic butter mixture evenly over the cut sides of the bread.
  5. In another bowl, combine the diced tomatoes and chopped basil, then spoon evenly over the bread.
  6. Sprinkle the shredded mozzarella over the tomato layer, followed by the grated Parmesan.
  7. Bake for 12 to 15 minutes, until the cheese is melted and bubbly.
  8. Broil for 1 to 2 minutes for a golden top, watching carefully to prevent burning.
  9. Remove from the oven, cool for 2 to 3 minutes, slice, and serve warm.
