Ingredients

  • 4 large ripe tomatoes, sliced into 1/4-inch rounds or wedges
  • 1 medium red onion, thinly sliced
  • 1/4 cup fresh parsley, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice or balsamic vinegar (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon freshly cracked black pepper, or to taste

Instructions

  1. Wash and dry the tomatoes thoroughly. Slice into even rounds or wedges and place in a large mixing bowl.
  2. Peel and thinly slice the red onion. Add it to the bowl with the tomatoes.
  3. Sprinkle the chopped parsley evenly over the vegetables.
  4. Drizzle olive oil evenly over the salad. Add lemon juice or balsamic vinegar if using.
  5. Season with salt and freshly cracked black pepper.
  6. Gently toss using salad tongs or clean hands, being careful not to break the tomatoes.
  7. Taste and adjust seasoning if needed. Serve immediately.
