Ingredients

  • 200 g (¾ cup + 1 tbsp) unsalted butter, softened
  • 200 g (1 cup) granulated sugar
  • 4 large eggs, at room temperature
  • 200 g (1⅔ cups) all-purpose flour
  • 80 g (⅔ cup) cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 120 ml (½ cup) fresh cream or milk cream, cold (for filling)
  • 3 tablespoons powdered sugar (for dusting)

Instructions

  1. Preheat oven to 170°C (340°F). Grease and lightly flour a 22 cm (9-inch) round cake pan.
  2. In a large bowl, beat softened butter and sugar until pale and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, sift together flour, cornstarch, and baking powder.
  5. Gently fold dry ingredients into the butter mixture in batches using a spatula to keep the batter light.
  6. Stir in vanilla extract.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the cake completely in the pan, then remove and slice horizontally.
  10. Fill with cold cream if using, reassemble, and dust with powdered sugar before serving.
