Ingredients

  • 1 pound (454 g) stewing beef, cut into ¾-inch cubes
  • 2 tablespoons olive oil
  • 2 large onions, coarsely diced
  • 1 garlic clove, crushed
  • 1½ cups tomato juice
  • 1 cup beef broth
  • 1 teaspoon salt
  • 1 tablespoon sweet Hungarian paprika
  • 2 to 3 large potatoes, peeled and cut into 1-inch cubes
  • 3 large bell peppers (mixed colors), cut into 1-inch pieces
  • Salt and pepper, to taste
  • Hot Hungarian paprika, optional

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown half of the beef on all sides, then remove. Repeat with remaining beef.
  2. Return all beef to the pot. Add onions and garlic. Sauté for a few minutes until onions soften.
  3. Pour in tomato juice and beef broth. Add salt and sweet paprika. Stir well and bring to a gentle boil.
  4. Reduce heat, cover, and simmer for 40 minutes.
  5. Add potatoes and bell peppers. Continue to simmer for 15 minutes or until potatoes are tender.
  6. Season with additional salt, pepper, and hot paprika if desired. Serve hot.

Notes

  • For extra richness, stir in 1/4 cup cream at the end.
  • Add a pinch of sugar to balance tomato acidity.
  • Skip potatoes and serve with crusty bread if preferred.
  • Use frozen sliced peppers and onions to save prep time.
