Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced

  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1 cup red lentils, rinsed
  • 4 cups water or vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until translucent, about 5 minutes.
  3. Add garlic and ginger, cooking for 1 minute until fragrant.
  4. Stir in turmeric, cumin, and paprika. Let spices bloom for 1–2 minutes.
  5. Add rinsed red lentils and stir to coat with spices.
  6. Pour in water or broth. Bring to a boil, then reduce to a simmer. Cover and cook for 25–30 minutes, stirring occasionally, until lentils are soft and creamy.
  7. Season with salt. Adjust consistency with extra water or broth if needed.
